My life is crazy. It seems like when I get one of my spheres in order, another one starts spinning the other direction. On top of work, meetings and sports I also am not a great cook. I can cook, but it’s definitely not my favorite thing to do. Strangely enough though, my kids think they need to eat. A lot at that. So when sports seasons roll around (ie: every season is sports season) I have to remember my tried-and-true recipes to get dinners on the tray table as quickly as possible.
Here are 3 of my easiest recipes that also are hits with my kids:
Grandma’s Meatloaf
-1 1/2 lbs ground beef or turkey
-1/2 cup oatmeal
-1 egg
-2 Tbsp ketchup
-1 cup milk
-1 tsp salt
-1/4 tsp pepper
Mix all ingredients together in large bowl
Mold into 9 inch pie plate
Spread 2 more tablespoons of ketchup over the top of loaf
Cover with saran wrap and leave a space open for air vent
Microwave on high for 15-20 minutes. Let stand 5-10 minutes before serving
Bacon-Cheese Pull-Aparts
-1 can of (8) biscuits
-1 Egg
-2 Tbsp milk
-3/4 cup shredded cheddar cheese
-1 package of pre-cooked bacon
Preheat oven to 350
Use non-stick spray to coat baking dish
Separate biscuits and cut each biscuit into quarters
Whisk together milk and egg
Coat biscuits with mix
Fold in bacon and cheese
Bake for 23-28 minutes or until biscuits are done.
Crescent Roll Taco Pizza
-1 can of crescent rolls
-1 pound ground beef or turkey
-Taco seasoning packet
-1 can refried beans
-shredded cheese
-any additional toppings you want : olives, onions, lettuce, tomato, sour cream
Preheat oven to 350
Cook ground beef or turkey and season per the instructions on seasoning
Unroll crescent rolls flat on pizza or cookie sheet
Spread refried beans over crescent rolls
Top refried beans with cooked meat
Top meat with cheese
Bake for 12-14 minutes
Add any additional toppings you want.
Mom Tip: If you have someone who doesn’t like refried beans leave a portion of the crescent rolls topped only with the meat and cheese.
