Easy Recipes For Cool Treats

With the school year winding down, we’re ready to think all things summer at my house! I’m already looking forward to long days at the splash park, outdoor BBQ’s, Royals baseball and yummy cool treats to beat the heat. With a couple 80-degree days earlier this week, my kids have been asking for their favorite cool treats. These are super easy if you have little helpers!

Frosted Lemonade 

Any other moms out there who feel like they could live at Chick-Fil-A? The play place, the iced coffee, the easily accessible high chairs, the superior customer service…I could go on and on. If you’re a fan of the frosted lemonade they offer, try this DIY version at home. 

Ingredients: 

-4 cups vanilla ice cream 
-1 12-oz can frozen lemonade concentrate
-1 teaspoon lemon zest 

Instructions: Put all ingredients into a blender until smooth. 

Variation: Use a different flavor of ice cream if you wish!

 

Banana Oreo Ice Cream 

If you’re looking for a healthy alternative to ice cream, no-churn frozen banana ice cream is a great choice (although the Oreos might cancel out some of the healthy but still).

Ingredients:

-4 ripe bananas (sliced and frozen for 12 hours)
-Oreo cookie
-1 tablespoon chunky peanut butter 
-tablespoon peanuts 

Instructions: Add the frozen bananas, 3 Oreo cookies and the peanut butter into a blender and blend until smooth. Add a few more Oreo cookies and blend again. Serve ice cream topped with peanuts and any other desired toppings, such as banana slices. 

Variation: Try adding strawberries or dark chocolate chips instead of peanut butter. 

 

3 Ingredient Frozen Yogurt Pops

My kids are picky eaters and I’m always looking for ways to add extra fruits and veggies to their diets. Use any combination of fruit or even throw in some greens to make these frozen yogurt pops. 

Ingredients:

-2 cups fresh or frozen fruit 
-2-3 tablespoons honey
-1 32 oz container Greek yogurt (plain or vanilla) 

Instructions: Blend ingredients in a blender until combined. Pour into popsicle molds (make sure to leave a bit of room for expansion). Place in the freezer for at least 5 hours.
