Breakfast on the Go :: Quick and Easy Breakfast Ideas

As fall approaches, our daily routine is changing. As we rush out the door to mom’s day out or ballet, time just hasn’t been on our side. I am finding it challenging to prepare breakfast and get where we need to be. The summers were filled with family time, casually making scrambled eggs, bacon and waffles, while sipping on a hot cup of coffee. But, lately we just don’t have time for that. We need something quick, something we can grab and eat as we are walking out the door – or even on our ride in the car!

The Life-Saving Toaster

If you have a few minutes to sit down and eat, the toaster makes a quick breakfast. Waffles, toast and pop-tarts are always great options. Try adding peanut butter and/or fruit to your waffles and toast for a change from the sugary syrup and jelly.

Clever Toaster Idea: Toast a slice or two of whole grain bread and top it with smashed avocado.

Freeze and Thaw

There are several meals you can make, divide into portions and store in individual baggies in your freezer. Then, the night before you can set the bag in the fridge or nuke them breakfast time to thaw.

Clever Freeze and Thaw Idea: You CAN have an amazing hot breakfast of spinach and bacon quiche or baked orange pecan french toast without getting up at 5 a.m.

Grab and Go – literally!

We all have those days where we have minutes to get everyone out to the car and go. Here are some ideas you can grab for the quickest of  breakfasts: breakfast in the car.

  • cereal bars

  • a cheese stick and ham
  • last night’s leftovers
